This gibier is made from wild boar caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, carefully processed and aged with expert skill. The artisan behind it is Hamish Murphy, an Australian who moved to this area. He has been developing the mountains based on permaculture principles, living in harmony with the natural cycle, and working with local hunters to establish a gibier processing facility. He continues his efforts to "make the most of wild life without waste."

Following the "Hygiene and Quality Assurance Guidelines" based on the Food Sanitation Act established by Chiba Prefecture, the meat is processed within two hours of capture and aged for 3-4 days in a dedicated refrigerator to maximize its flavor. This thorough hygiene management not only ensures you can purchase with confidence but also makes the gibier easy to handle and cook at home.

The wild boar sausage is Hamish's proud creation. It is an additive-free sausage made from aged meat, with added herbs and spices. It has a deep richness unique to wild game meat, yet is surprisingly easy to eat and pairs perfectly with beer or wine.

<調理 Instructions>
Thaw by simmering in hot water for about 15 minutes or in cold water for about 20 minutes. After thawing, grill or pan-fry thoroughly: 5-8 minutes after simmering in hot water, or 10-12 minutes over low heat if thawed in cold water.

MINEOKA GIBIER

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
