This gibier is made from wild boar caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, carefully processed and aged with skilled craftsmanship. The work is handled by Hamish Murphy, originally from Australia, who moved to this area. He cultivates the mountains based on permaculture principles, living in harmony with nature's cycles, and works with local hunters to establish a gibier processing facility, continuously striving to "make the most of wild life without waste."
Following the "Guidelines for Hygiene and Quality Assurance" based on the Food Sanitation Act established by Chiba Prefecture, the gibier is processed within 2 hours of capture and aged for 3-4 days in a dedicated refrigerator to maximize its flavor. This thorough hygiene management not only ensures that you can purchase with confidence but also makes the gibier easy to handle and cook at home.
The boar loin offers a superb balance of robust red meat flavor and sweet fat. Aged for about a week, the meat becomes tender, revealing a deep richness and subtle sweetness. With simple cooking methods like steaks, roasts, or miso-marinated dishes, you can fully enjoy the unique taste of wild meat.

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
