About Shipping
Fish raised in the rich feeding grounds of Akashi Strait in Hyogo Prefecture, buffeted by strong currents, are characterized by their firm flesh and rich umami.
At Akashiura Fishing Port, fishermen thoroughly practice "ike-goshi," where fish brought back are rested in large live tanks, and shinkei-jime (nerve-killing) and bleeding. By minimizing stress on the fish, they are shipped after their freshness and umami have been maximized.
This delivery will be an omakase set of seasonal fish carefully selected at that day's auction. Please enjoy the seasonal fish woven by the sea of Akashi and the skill of our craftsmen.
