This gibier is made from wild boar caught in the Mineoka mountains of Kamogawa, Chiba Prefecture, carefully processed and aged with expert skill. The work is handled by Hamish Murphy, an Australian who relocated to this area. He has cultivated the mountains based on permaculture principles, living in harmony with nature's cycles, and has partnered with local hunters to establish a gibier processing facility, continuously striving to "utilize wild life respectfully and without waste."

In accordance with the "Hygiene and Quality Assurance Guidelines" based on the Food Sanitation Law established by Chiba Prefecture, the meat is processed within two hours of capture and aged for 3 to 4 days in a dedicated refrigerator to maximize its flavor. This thorough hygiene management not only ensures that you can purchase with confidence, but also results in gibier that is easy to handle and cook at home.

The ground boar meat has an exquisite balance of lean and fat, making it perfect for meatballs, hamburgers, gyoza, and pizza toppings. When combined with sansho pepper or other spices, it develops a deep flavor unique to gibier. It's a versatile ingredient that can easily be incorporated into home cooking.

MINEOKA GIBIER

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
