This gibier is wild boar carefully processed and aged, caught in the Kamogawa/Mineoka mountains of Chiba Prefecture. It's handled by Hamish Murphy from Australia. Living in harmony with nature's cycles, he continues his efforts with local hunters to "utilize wild lives without waste."
Processed within 2 hours of capture and aged for 3-4 days to bring out the umami, ensuring reliable quality. The ground wild boar has a good balance of lean meat and fat, making it versatile for a wide range of dishes such as hamburg steaks, gyoza, and pizza. It also pairs well with Sansho pepper and spices, allowing you to easily enjoy the taste of gibier.

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
