This gibier features wild boar caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, carefully processed and aged with expert skill. The work is done by Hamish Murphy, an Australian who moved to this area. He developed the mountain based on permaculture principles, living in harmony with the natural cycle. Together with local hunters, he set up a gibier processing facility and continues his efforts to "cherish and utilize wild life without waste."

Following the "Guidelines for Ensuring Hygiene and Quality" based on the Food Sanitation Act established by Chiba Prefecture, the meat is processed within two hours of capture and aged for 3-4 days in a dedicated refrigerator to maximize its umami. This thorough hygiene management ensures that you can purchase it with confidence, and it also makes the gibier easy to handle and cook at home.


The inner thigh of the wild boar is characterized by its lean, firm red meat. While healthy, the meat has a powerful flavor, making it ideal for tataki, steaks, and sous vide cooking. It offers a firm texture with a sweetness brought out by aging.

MINEOKA GIBIER

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
