This gibier is made from wild boar caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, carefully processed and aged with expert skill. The work is handled by Hamish Murphy, an Australian who relocated to the area. He has cultivated the mountain based on permaculture principles, living in harmony with the natural cycles, and has established a gibier processing facility with local hunters, continuing his efforts to "cherish and utilize wild lives without waste."
Following the "Hygiene and Quality Assurance Guidelines" based on the Food Sanitation Act established by Chiba Prefecture, the gibier is processed within two hours of capture and aged for 3 to 4 days in a dedicated refrigerator to maximize its umami. This thorough hygiene management not only ensures peace of mind for buyers but also makes the gibier easy to handle and cook at home.
The boar shoulder loin is a cut from the shoulder to the back, offering a good balance of marbling and the rich flavor of lean meat. While it has a rich taste, it is also tender, allowing you to enjoy the deep, distinct umami of gibier in stews or shabu-shabu.

MINEOKA GIBIER
千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
