This gibier is made from wild boar caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, carefully processed and aged with expert techniques. The processing is handled by Hamish Murphy, an Australian who relocated to this region. He develops the mountains based on permaculture principles, living in harmony with the natural cycle. Together with local hunters, he has established a gibier processing facility, continuing his efforts to "respect and utilize wild game without waste."
In accordance with the "Hygiene and Quality Assurance Guidelines" based on the Food Sanitation Act established by Chiba Prefecture, the meat is processed within two hours of capture and aged in a dedicated refrigerator for 3 to 4 days to maximize its umami. This thorough hygiene management not only ensures that you can purchase with confidence, but also results in gibier that is easy to handle and cook at home.
Boar chuck roll is a cut from the shoulder to the back, where a good balance of marbling and the rich flavor of lean meat coexist. It offers a deep flavor yet is tender, allowing you to enjoy the profound umami characteristic of gibier when used in stews or shabu-shabu.

MINEOKA GIBIER
千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
