This gibier is wild boar hunted in the Mineoka Mountains of Kamogawa, Chiba Prefecture, carefully processed and aged by skilled artisans. Hamish Murphy, originally from Australia, moved to this region and is the artisan behind it. He cultivates the mountains based on permaculture principles, living in harmony with nature's cycles, and works with local hunters to establish a gibier processing facility. He continues his efforts to "respect and utilize wild life without waste."
Following the "Hygiene and Quality Assurance Guidelines" set by Chiba Prefecture based on the Food Sanitation Act, the meat is processed within two hours of capture and aged for three to four days in a dedicated refrigerator to maximize its flavor. This thorough hygiene management ensures that you can purchase with confidence, and also makes the gibier easy to handle and cook at home.
Deer shin-tama (top round) is a soft, lean cut from the inner thigh. It has a delicate texture with little gamey flavor and a moist mouthfeel. It is excellent for roasting, steaks, and dishes paired with Japanese-style dashi broth.
Please enjoy the rich flavor of this gibier, born from a life lived in harmony with nature.
