About Shipping
Nagomi Nosan is a livestock farm in Tendo City, Yamagata Prefecture, that is committed to using 100% domestic feed and long-term rearing.
Only a handful of producers in Japan raise cattle using only domestic feed, without preservatives or additives.
Their feed is primarily domestic rice, blended with various other domestic ingredients such as corn, barley, and sake lees.
By leveraging the bounty of nature, the meat develops a light, elegant texture and a rich, deep flavor.
Furthermore, Nagomi Nosan's cattle are fattened for over 980 days (32 months).
This long, slow process allows the umami of the lean meat and the sweetness of the fat to harmonize perfectly, leaving an exceptionally lingering taste.
"Mom" (round) is one of the cuts that best represents lean beef. The robust umami of the lean meat and the delicate sweetness of the适度marbling are exquisitely combined, and its full appeal can be savored when prepared as a steak or roast beef.

For izakaya, Japanese, and Chinese cuisine, approximately 60-90g per person.
For main dishes such as in bistros, approximately 120-180g.
For hot pot dishes like sukiyaki and gyunabe, approximately 100-150g is a guideline.
