About Shipping
Nagomi Nosan is a livestock farm in Tendo City, Yamagata Prefecture, that specializes in 100% domestic feed and long-term rearing.
Only a handful of producers in Japan raise cattle solely on domestic feed, without using preservatives or additives.
Their feed primarily consists of domestically grown rice, supplemented with a blend of domestic corn, barley, sake lees, and other ingredients formulated in-house.
By harnessing the bounty of nature, the meat develops a light, elegant texture and a rich, profound flavor.
Furthermore, Nagomi Nosan's cattle are fattened for over 980 days (32 months).
This slow, deliberate process allows the umami of the lean meat and the sweetness of the fat to harmonize beautifully, creating an exceptionally lingering aftertaste.
"Sirloin" is a cut from the loin of the cow, offering a exquisite balance of lean meat and fat.
Its tender texture and rich umami make it justifiably known as the king of steaks.
Simply grilled with salt and pepper, you can fully enjoy the refined flavor unique to Wano Kanade.

"There is almost no beef-specific fat odor. The meat fibers are also fine, but the "familiar beef umami" is more pronounced than in Wano Kanade. There are no negative odors associated with beef. This is a superb beef with supple meat and concentrated umami."
