About Shipping
Nagomi Nosan is a livestock farm located in Tendo City, Yamagata Prefecture, dedicated to raising cattle on 100% domestic feed and through long-term rearing.
Only a handful of producers in Japan raise cattle using only domestic feed, without preservatives or additives.
Their feed primarily consists of domestically produced rice, supplemented with a self-formulated blend of domestic corn, barley, sake lees, and other ingredients.
By harnessing the blessings of nature, the meat develops a light and elegant texture with a rich, profound flavor.
Furthermore, Nagomi Nosan's cattle are fattened for over 980 days (32 months).
This slow and careful process allows the umami of the lean meat and the sweetness of the fat to harmonize perfectly, leaving a truly exceptional aftertaste.
"Rump" is a lean cut from the cow's loin to the hip.
It has a firm texture yet is tender, with the umami of the lean meat spreading with every bite.
Its deliciousness can be fully appreciated through simple cooking methods that bring out its natural flavor, such as steak, roast, or tataki.
