About Shipping
Nagomi Nosan is a livestock farm in Tendo City, Yamagata Prefecture, committed to using 100% domestic feed and long-term rearing.
Only a handful of producers in Japan raise cattle using only domestic feed, without preservatives or additives.
Their feed is primarily domestic rice, blended with various other domestic ingredients such as corn, barley, and sake lees.
By utilizing natural blessings, the meat quality is light and elegant, with a rich, savory flavor.
Furthermore, Nagomi Nosan’s cattle are long-term fattened for over 980 days (32 months).
Taking ample time allows the umami of the lean meat and the sweetness of the fat to harmonize perfectly, leaving a lingering, exceptional aftertaste.
Sirloin is a cut from the loin of the cow, offering an exquisite balance of lean meat and fat.
It boasts a tender texture and rich umami, earning its reputation as the king of steaks.
Simply grilled with salt and pepper, you can fully enjoy the refined flavor unique to Wano Kanade.
Chef's Review
"There is almost no beef-specific fat odor. The meat fibers are also fine, but the "familiar beef umami" is felt more than in Wano Kanade. There are no negative odors typically associated with beef. This is an excellent beef with supple texture and rich umami."
