Nagomi Nosan is a livestock farm based in Tendo City, Yamagata Prefecture, that focuses on using 100% domestic feed and long-term rearing .
There are only a handful of producers in Japan who raise cattle using only domestically produced feed, without using preservatives or additives.

The feed is mainly made from domestically produced rice, and the farm mixes many other ingredients, including domestic corn, barley, and sake lees.
By utilizing the bounty of nature, the meat is light, elegant, and richly flavored.

Furthermore, Nagomi Farm's cattle are fattened for a long period of time, over 980 days (32 months).
By taking the time to prepare it, the umami of the red meat and the sweetness of the fat are harmoniously balanced, creating an exceptional aftertaste that fills the mouth.

"Rump" is one of the most representative cuts of beef lean meat. The powerful umami of the lean meat and the delicate sweetness of the moderate marbling are exquisitely combined, and you can fully enjoy its charm by making it into steak or roast beef.
