About Shipping
Nagomi Nosan is a livestock farm in Tendo City, Yamagata Prefecture, committed to using 100% domestic feed and long-term rearing.
Only a handful of producers in Japan raise cattle solely on domestic feed, without preservatives or additives.
Their feed consists mainly of domestic rice, along with a blend of domestic corn, barley, sake lees, and other ingredients they mix themselves.
By utilizing the blessings of nature, the meat develops a light, refined quality with a rich, savory flavor.
Furthermore, Nagomi Nosan's cattle are fattened for over 980 days (32 months).
This slow, deliberate process allows the umami of the lean meat and the sweetness of the fat to harmonize perfectly, leaving an exceptionally lingering aftertaste.
"Rump" is a lean cut from the loin to the rear of the cow.
It has a firm texture yet is tender, and the umami of the red meat intensifies with every chew.
Its deliciousness can be fully savored with simple cooking methods that highlight its natural flavor, such as steaks, roasts, or tataki.
