This is gibier meat from wild boars caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, meticulously processed and aged by a skilled craftsman. The person behind this is Hamish Murphy, originally from Australia, who moved to this area. He has been developing the mountains based on permaculture principles, living in harmony with nature's cycles, and has set up a gibier processing facility with local hunters, continuing his efforts to "respect and make full use of wild lives without waste."
Following the "Hygiene and Quality Assurance Guidelines" based on the Food Sanitation Act established by Chiba Prefecture, the meat is processed within two hours of capture and aged for 3-4 days in a dedicated refrigerator to maximize its flavor. This thorough hygiene management not only ensures that you can purchase with confidence but also results in gibier that is easy to handle and cook at home.
The venison inner thigh is lean and firm, with little fat. It has a clean, refreshing taste with no strong gamey flavor, making it highly recommended for health-conscious individuals. You can enjoy the natural goodness of the meat simply through low-temperature cooking, carpaccio, or tataki.

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
