This gibier is carefully processed and aged wild boar (or deer) caught in the Kamogawa-Mineoka Mountains of Chiba Prefecture. It is handled by Hamish Murphy from Australia, who, as part of a life that utilizes natural cycles, continues his efforts with local hunters to "make the most of wild lives without waste."

With processing within 2 hours of capture and 3-4 days of aging, this gibier offers reliable quality with maximized umami. The deer sirloin has little gamey odor and is characterized by its moist and tender red meat, making it an excellent match for roasting, steaks, and even Japanese-style broth.

MINEOKA GIBIER

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
