Nagomi Nosan is a livestock farm in Tendo City, Yamagata Prefecture, that is committed to using 100% domestic feed and long-term rearing.
Only a handful of producers in Japan raise cattle solely on domestic feed, without using preservatives or additives.

The feed primarily consists of domestic rice, supplemented by a blend of domestically sourced corn, barley, and sake lees, all mixed in-house.
By utilizing the blessings of nature, the meat develops a light, elegant, and rich flavor.

Furthermore, Nagomi Nosan's cattle are fattened for over 980 days (32 months).
This extended period allows the umami of the lean meat and the sweetness of the fat to harmonize beautifully, creating an exceptionally lingering taste.

"Sirloin" is a cut from the loin of the cow, known for its exquisite balance of lean meat and fat.
It boasts both a tender texture and rich umami, which is why it's considered the king of steaks.
Simply grilled with salt and pepper, you can fully enjoy the refined flavor unique to Wano Kanade.


Chef's Evaluation
"There is almost no characteristic fat odor of beef. The meat fibers are equally fine, but the "familiar beef umami" is felt more than with Wano Kanade. There are no negative odors associated with beef. It is a wonderful beef with flexible texture and rich umami."
