Steamed Mussels in White Wine

- Ingredients (Serves 3-4) -

Mussels 1kg (cleaned)
Olive oil approximately 20-30cc
Garlic 1 clove (smashed with skin on)
Red chili pepper 1 (seeds removed)
White wine approximately 100cc
Coarsely ground black pepper *1) plenty

Italian parsley appropriate amount (roughly chopped)
Lemon appropriate amount


*1) A generous amount of pepper is how mussels are typically eaten in Southern Italy.

- Instructions -

① Place all ingredients except the mussels in a pot and heat over high heat. Once boiling, add the mussels, cover, and cook for 4-5 minutes. Occasionally shake the pot to encourage the shells to open.

② Once the shells have opened, quickly add the Italian parsley, cover, turn off the heat, and let steam for a short while.
Serve with sliced lemon.
