Sweet potato (Silk Sweet)
Thyme
Garlic
Pure olive oil
Onion
Butter
Milk
Water
Mixed spices (*for Pain d'épices)
Extra virgin olive oil
Black pepper
*Spice cake-like pastry
ー Instructions ー
① Place sweet potatoes with thyme and garlic in plenty of pure olive oil and heat, maintaining 80-85°C for about 2 hours.
② Sauté sliced onions in butter. Sprinkle with salt partway through and sauté slowly without browning to bring out their sweetness.
③ Peel the sweet potatoes from step ①, slice them, and add to the sautéed onions from step ②. The guideline is 5 sweet potatoes (approx. 1-1.5kg) per 2 onions.
④ Add milk and water as needed and simmer. Add a small amount of mixed spices.

⑤ Blend in a blender (Vitamix) until smooth.


⑥ Place an appropriate amount in a pot, warm it, and adjust seasoning with milk and salt.
⑦ Serve in a bowl, drizzle with extra virgin olive oil, and grind black pepper over it.
