Sweet potatoes (Silk Sweet)
Thyme
Garlic
Pure olive oil
Onion
Butter
Milk
Water
Mixed spices (for *pain d'épices)
Extra virgin olive oil
Black pepper
*A spice-infused pound cake-like confection
ー Instructions ー
① Place sweet potatoes, thyme, and garlic in plenty of pure olive oil and heat, maintaining 80-85℃ for about 2 hours.
② Sauté sliced onions in butter. Sprinkle with salt partway through and sauté slowly until tender, without browning, to bring out their sweetness.
③ Peel the sweet potatoes from step ①, slice them into rounds, add them to step ②, and sauté together. As a guideline, use about 5 sweet potatoes (approx. 1-1.5kg) for 2 onions.
④ Add milk and water as needed and simmer. Add a small amount of mixed spices.

⑤ Blend in a mixer (Vitamix) until smooth.


⑥ Place a suitable amount in a pot and warm, then adjust the seasoning with milk and salt.
⑦ Serve in a bowl, drizzle with extra virgin olive oil, and grind black pepper over it.
