Bread flour (Powder Snow) 250g
All-purpose flour (Kitahonami Straight) 58g
Whole wheat flour (Ble du Peuple) 38g
Milk 27g
Sugar 35g
Salt 6g
Instant dry yeast 2g
Water 250g
Instructions
① Mix all ingredients except water thoroughly, then add water and knead. Ferment in the refrigerator overnight.
② Place in a mold and bake in a convection oven at 200°C with 20% humidity for 25 minutes.
