This gibier is wild boar, caught in the Mineoka Mountains of Kamogawa, Chiba Prefecture, and meticulously processed and aged using expert techniques. The work is done by Hamish Murphy, an Australian who relocated to this area. He has been developing the mountains based on permaculture principles, living in harmony with the natural cycles, and working with local hunters to establish a gibier processing facility, continuously striving to "utilize the life of wild animals carefully and without waste."

Following the "Guidelines for Ensuring Hygiene and Quality" based on the Food Sanitation Act established by Chiba Prefecture, the meat is processed within two hours of capture and aged for 3 to 4 days in a dedicated refrigerator to maximize its flavor. This thorough hygiene management ensures that you can purchase it with confidence, and it also makes the gibier easy to handle and cook at home.


The wild boar sausage is a processed product that Hamish is particularly proud of. It is an additive-free sausage made with aged meat, herbs, and spices. It has a deep richness unique to wild game, yet it is surprisingly easy to eat and pairs perfectly with beer and wine.

〈Cooking Instructions〉
Thaw by simmering in hot water for about 15 minutes or in cold water for about 20 minutes. After thawing, grill or pan-fry thoroughly: 5-8 minutes after simmering, or 10-12 minutes on low heat after cold water thawing.

Shipping fees to the Kanto region are included in the product price.

MINEOKA GIBIER

千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
