This gibier is carefully processed and aged wild boar, caught in the Kamogawa/Mineoka mountains of Chiba Prefecture. It is handled by Hamish Murphy from Australia, who, based on permaculture principles, leads a life that utilizes natural cycles and, together with local hunters, continues efforts to "make the most of wild lives without waste."
By ensuring processing within 2 hours of capture and aging for 3-4 days, the gibier achieves a safe, high-quality finish with maximum umami. Among them, the wild boar sausage is a proud, additive-free specialty. It combines the richness unique to wild meat with ease of eating and pairs exceptionally well with sake.

Thaw in a hot water bath for about 15 minutes. After thawing, pan-fry for 5-8 minutes until thoroughly cooked, then serve.

MINEOKA GIBIER
千葉県鴨川市で、野生の鹿や猪を捕獲し、2時間以内に解体処理。専用冷蔵庫にて熟成させてから、ソーセージなどの加工食品を丁寧に手作りし、販売している。千葉県で最も標高の高い愛宕山を有する嶺岡山地に位置することからの命名。添加物をいっさい使わず、ハーブやスパイスを巧みに使った味わいが注目を集めている。
